Zucchini Muffins

One of my favourite tips to give people who are just starting to get into healthy eating is to make your own snacks!! Not only will you save money, but you’ll be less tempted to buy random “health” food snacks and actually know what’s going into your food!

This recipe is super simple …

  • 1 1/2 cups of shredded zucchini

  • 1/3 cup of softened coconut oil (you need to be able to mix it)

  • 6 eggs

  • 1/2 cup of coconut flour

  • 1/4 teaspoon of baking soda

  • 1/2 teaspoon of Himalayan salt

  • 1 teaspoon of pure cinnamon

  • 1/4 cup of Giddy Yoyo chocolate broken up (or chocolate of your choice)

  • 1/4 cup of crushed walnuts

Combine all your ingredients and mix thoroughly. Scoop your batter into a greased/lined muffin tray and cook at 350 for 20-25 minutes!
