Vegan Sour Cream

Who else tosses everything left over from their meal prep in a bowl and hopes for the best at the end of the week? 🤞💁🏼 Something I've always put effort into doing is making my own dressings, sauces and condiments. My reasoning behind this? Quality. Store bought condiments/sauces/dressings, while convenient, are typically very high in unnecessary sugar and sodium. Ketchup for example is a product of a tomato - a medium sized tomato typically has about 2.3g of sugar. Ketchup contains 4.7g of sugar PER TABLESPOON. Think about that. Tomatoes are naturally sweet tasting, this isn't necessary! You also don't know where this sugar is coming from .. When you make your own dressings, condiments and sauces you know exactly what you're putting into your body. 
In this picture, along with some olive oil, I have some of my vegan sour cream as part of my mash up! Here is the super easy recipe for anyone dairy free or just wanting to try something new ☺️
- 1 cup of softened cashews (soak in water for approx. 4 hours)
- 1/3 cup of water
- 1 lemon (squeezed)
- 1 tbsp of nutritional yeast
- Pinch of Himalayan sea salt
- 1 tbsp of apple cider vinegar
Just blend it all up and enjoy!
