Blueberry-Mint Vegan Cheesecakes
Vegan Cheesecakes!
If you have a food processor this recipe is seriously so simple 😇
For the base I used …
- 1 cup of walnuts
- 1 cup of dates
For the top layer I used ..
- 1 1/2 cups of pre-soaked cashews
- 1/3 cup of coconut oil
- 3/4 cup of separated coconut milk (the fatty part)
- 1/2 cup of agave or maple syrup
- 1/4 cup of lemon juice
*You can add peanut butter, raspberries or really anything to give these flavour! I used fresh mint and @giddyyoyo blueberry powder!
How to?
Use your food processor or blender to blend together your crust ingredients! Then press them firmly into a pan of your choice (I used a muffin pan)!
Then blend your top layer ingredients together until they become smooth and scoop them evenly on top of your crust!
Put some plastic wrap over the tin and place in the freezer for 2 and a half hours, then enjoy!
